Posole

Yield: 8-12 servings

Cooking Time: 6-7 hours

Ingredients

  • 1 pound prepared posole corn, thoroughly rinsed
  • 10 cups water
  • 1 pound pork roast cubed
  • 5 cups water, approximately
  • 2 tablespoons salt
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 ½ pints Red Chile Sauce

Directions

  1. Place posole corn, water cubed pork, salt onion and garlic in a large stewing pot. Bring mixture to a boil at high heat, reduce heat to a low and simmer for 5 hours until corn is tender.
  2. Top with Red Chile Sauce, and serve.
