Carne Adovada (Marinated Pork)


  • 4 cloves minced garlic
  • 1 tablespoon salt or as desired
  • 1/2 cup red chile powder
  • 1 cup water
  • 5 pounds lean pork cubed


  1. Combine red chile powder, garlic and salt. Add water and mix well.
  2. Place pork in large, glass, baking dish and pour chile mixture over steaks.
  3. Cover and refrigerate for 8-24 hours.
  4. Place drained, marinated steaks in a 350°F oven and roast for 40-60 minutes.
  5. Serve with heated, remaining Red Chile Sauce if desired.
